You can find a raiding guild regardless of your race.
Having said that, dwarf priests are obviously number 1 thanks to Fear Ward. The human racial doesn't really come into play until very late in the game as early its effect is quite small. If you really hate how the dwarves look or you prefer the quicker human reputation gain, then go for a human. It is extremely unlikely that a guild will reject only because of that. At the end of the day, there aren't that many raid encounters where fear plays an important role and Horde doesn't even have Fear Ward at all, yet they still manage to clear content.
Also, don't bother competing with paladins, spamming Flash Heal and going OOM. That's their shtick and they are the best. Better to stick to using Heal and Greater Heal and cancelling casting if they aren't required, since the big heals are a strong suite of a priest. Some people get fixated with meters but they are only relevant for damage dealers. Your job is to ensure that people don't die. Zero/few deaths is a better badge of honour than being #1 on healing done.
