There aren't very many tank slots in raid guilds. Rolling a class that is capable of tanking 5-mans (druid, warrior, paladin) is a fine idea to make gearing a bit easier at 60, but don't go into it thinking you are going to tank at endgame.
The typical answer I give to these sorts of questions though is to play what you will enjoy long-term. I'd much rather have a happy raider who likes playing their class than someone who will get frustrated and burn out because they rolled something to fill some perceived demand. The reality is on 40 man raids there is enough class depth for basically everything other than prot tanks that you should just play what you enjoy.
TBH even prot can be on the table, you should just know it requires farming an insane amount of gold for BOEs and resist gear (and not to scare you but it's probably north of 4,000-5,000 gold to have perfect gear as a prot warrior).
