How to make gold.

If you're a 60 Warrior who can tank, you will always be in demand for 5-man runs. Just pick one appropriate for your gear level & go. As mentioned you can quest for gold at 60 (rather than XP) and also vendor any quest rewards (some of them are worth 2g or more.)

Anyone tried making gold off fishing? I'm guessing they fish for essence of fire, but is there no fish at higher lvls that sell good? I'm only on like 150 fishing atm and we'll the profit havn't been huge.

When I was between level 30 and 40 I was fishing Stonescale Eel's in STV. In those days you got 10-15g for a stack. You can easily make 2-3 stacks per hour.

I find finishing quest to be too slow for money. Who has a lot of quest left in 1 zone anyway to make it pay off.
If you farm something even as a warrior you can get 30G/hour. So you quest has to bring in atleast 1G every 2 minutes.

Join a raid for farming giants in winterspring or tank for money/reagents if you don't know how/what to farm solo.
