So i want to know if i start today and i play From today December 18 all the way through till January 3rd Will i be able to Reach level 60 in that time? On the Alliance PvP side

It depends what kind of player you are, what decisions you make while leveling. If you're enough of an autist, it will only take a few days of concentrated gaming.

you need 6 to 8 days /played (depends on you), maybe even faster. So do the math

i did it in 5days 14 hours as a mage

It takes me on average about a month or so

Depends how many hours a day you spend in WoW. I have a friend who started when the server launched and is level 59

But mage because of water/bread and portals and easy kill speed AND kill amount is imo too good ^^
