Mining Nodes Disappearing

i learned blacksmithing and mining as my professions for my paladin however i havent been able to mine a single copper vein. they always keep on disappearing as soon as i get near them. since i learned mining at lvl 6 and right now im about to lvl to lvl 10 and still havent got a single copper vein because they always disappear. is it only elwynn forest and is that for the rest of the game? beacuse if thats the case for the rest of the game then im not sure if ill be playing any longer.

Elwynn appears to be the problem. I have had little issue in most other places (other than other farmers of course)
